Ok, I admit. When I received this jar of Tropical Traditions Virgin Coconut Oil I was wondering what I was going to do with it. I'm fairly adventurous in the kitchen when it comes to cooking and definitely open to trying new things...but coconut oil, really threw me for a loop.


First let's answer the question you're all asking...What is it?


Virgin Coconut Oil is a food, and is one of the best cooking oils you can use. It has been a staple cooking oil for thousands of years in tropical climates. As a cooking oil, its chemical structure is kept in tact and therefore is resistant to mutations of fatty acid chains even when used in higher cooking temperatures, unlike most vegetable oils. Research shows that the medium chain fatty acids found in coconut oil boosts the body’s metabolism, raises body temperatures, and helps provide greater energy which can lead to weight loss.


Luckily, the jar also came with a book simply titled Virgin Coconut Oil that contains recipes and testimonials. As I was still a little apprehensive to try it in anything.

So, I started out simple. An obvious choice...something sweet. I don't associate coconut anything as savory. So a dessert it was. I opted for cupcakes.

I had a box of German Chocolate cake mix (I do not bake from scratch...I hate baking for the most part). I followed the directions on the package and used the coconut oil in place of vegetable oil. I also used the coconut oil to grease my muffin pans. The batter smelled really coconut-y when I was mixing it up. I was thinking it was going to be coconut overkill.

Thirty minutes later I pulled the muffins from the oven. My house filled with the delicious scent of chocolate and coconut. I decided not to frost them as I didn't know how sweet they'd be with the coconut oil in them...so I guess that makes them "muffins" and not cupcakes, right?

Anyway, the muffins were light and really moist. They had just a hint of coconut flavor to them, not over kill like I expected. They came out of the pans easily and since a coconut frosting is something you typically pair with German Chocolate cake the added coconut flavor from the coconut oil was a welcome fit.




There are many other uses for this coconut oil. According to the book you can give it to you cat to make his coat soft and shiny. I offered my cat a taste and he wouldn't have anything to do with it...but my cat is weird and doesn't eat table scraps or anything. He's a cat-food kinda cat.

I found out that "No chemical or high-heat treatment is used, and this oil contains no trans fatty acids. We do NOT mass produce this oil. It is made by families who are coconut farmers using old-fashioned traditional methods that have been used in the Philippines for hundreds of years. Our coconut trees and family producers are certified organic according to strict USDA standards. This is something that I never thought of using, although I guess I knew that it was heavily used in areas of the world where coconuts grow. I learned that it is one of the best and healthiest cooking oils, rich in lauric acid, a nutrient that supports the body’s immune system, and is also found in human mother’s milk.
I would probably use it in baking something first--I am not particularly fond of coconut flavor, but if it is faint in the finished product, it might be OK.
