Is There A Big Fat Loser Award? For Me?

I don't know how I missed it but I did...

I went and thanked my other blog readers for their awards and didn't include her because I'm a big fat loser and didn't know. I am so, so, so sorry!

And I'm completely and totally grateful that you would think of as Awe-summm...(though maybe your opinion has changed now, and hell...I don't blame you!)

American Idol - Spoilers! 4/28 & 4/29


Performance wise, I think this was the best week for everyone. I thought everyone did a really good job. Jamie Foxx gave some good advice and the contestants really did shine this week.

I was not surprised to see Kris and Matt in the bottom three. However, I thought Allison would have been there before Adam. That kind of threw me for a loop. Then when Kris was sent to safety and Adam was in the bottom two I had Daughtry flashbacks. For real.

It was Matt's time to go though. And you could tell when he was standing up there with Adam that he knew it too. As much as I like Matt he just doesn't have the popularity and can't wow the judges the way that some of the other contestants can.

And really, everyone left is so good now...someone had to be in the bottom three. Someone we weren't expecting.

I really think that it's going to come down to Danny and Adam in the finale. I'd almost put money on it.

Kris or Allison will be the next to go.

Chicken Quesadillas

I used to make these all the time and I forgot about them. I remembered them the other day and finally made them again yesterday. Quick, easy and yummy!

  • 1 10oz can of cream of chicken soup
  • 2 cups of chopped, cooked chicken
  • 3/4 cup shredded Cheddar cheese, divided
  • 3/4 cup shredded Monterey Jack cheese, divided
  • 1 T chopped jalapeno
  • 8 flour tortillas
  • 2 T butter/margarine
  • Sour cream and salsa for garnish and dipping

Mix soup, chicken, 1/2 cup Cheddar, 1/2 cup Monterey Jack and jalapeno in a medium saucepan. Cook, stirring frequently, over medium heat until heated through, about 5 minutes.

Divide chicken mixture among each tortilla, spreading within 1/2 inch of edges.

Moisten tortilla edges with water; fold over to enclose filling. Press tortilla edges together to seal.

Melt butter in a large skillet over medium heat; add quesadillas. Cook until heated through, about 10 minutes. Top with remaining cheese. Serve with salsa and sour cream.


MY WAY:
I double the recipe by using a 2 cans of soup (there are 5 people in my house and we like leftovers)

I add 1 small can of green chilies (you could still use jalapenos if you wanted)

I usually use Pepper Jack cheese instead.

I also just buy a whole cooked chicken from the deli at my grocery store, then just shred it.

I use my pancake griddle so I can make several at a time and I don't have to use the butter since it's non-stick.

And I don't bother folding them in half, I just lay them out like this:
Lay tortilla on griddle, top with chicken mixture and a little bit of extra cheese if you want.



Top with another tortilla, flip when they're browned on one side.



I slice 'em up with a pizza cutter. Throw some salsa, sour cream and refried beans on the plate. Ta-da! Dinner. Eat.

17 Again Review


I'm so not impressed with movies lately. This movie had two really good things about it.

  1. EYE
  2. CANDY

I think I developed a little crush on Zac Efron watching this film. Man, he's cuuuuute! And I've always loved Mathew Perry though he's better on Friends than he is in any movie I've ever seen him in.

Without giving too much away this is about a man who spends too much time worrying about things he should have done. So he's given the opportunity to be 17 again through his genie in a bottle/fairy godmother?...who just happens to be disguised as a burly male high school janitor. Mmmkay...

So, he goes back to high school to try and relive and re-do whatever it is that he felt needed to be redone.

It was boring. And predictable for the most part. Some parts were funny, most were not. Like hearing Zac say the word "douche", that was kinda funny...though it would have been better had he dropped an F-bomb or something.

I spent a majority of the film trying to figure out who the school principal was and where the hell I'd seen her before. When the credits rolled I learned it was Melora Hardin....and I immediately realized who she was. She did a dancey dance at Brobee's birthday party on Yo Gabba Gabba.

I can't escape that show no matter what I do!

Anyway...Um...2.5 stars for this movie? Maybe 3 if you like super love Zac Efron.

Dive Bars Are Fun

On Saturday night the hubs and I went to a local bar to see my uncle's band play. I've seen my uncle's band play several times. They just do cover songs. It's always fun to see them play and this was their first bar gig so I had to go show some love.

Funny thing about this place...the ladies room. Yep, I'm blogging about their ladies room. The toilet is not against a wall, it just kind of sits in the middle of the room. And on the wall next to the toilet they have a full length mirror (not shown in the picture)...so you can watch yourself pee. Neat? I dunno...




This sticker is on the paper towel dispenser in the ladies room.





I asked this guy if I could take a pic of his shirt. He explained that he ate a live minnow (PETA...stay away, I'm not condoning this by any means!)to earn the shirt. Um...ew.




The second band that played was Ravings of a Madman.

Totally different style of music than what I'm used to...but good none the less. I was giving them shit about looking like they played Weezer-esque type music. And the singer looked like the Billy Joe Armstrong from Green Day.

The drummer said I was full of piss and vinegar. (is that an insult?)
Luckily, they didn't kick my ass.

Anyway, I know my blog is not their cup of tea...as their music is more than likely not yours. But I'm giving a friendly shout-out because you never know, right? They're just some cool guys from Montana trying to get on the Warped Tour. So if you dig 'em...vote for 'em!

Simply Sushi Review

Just talking about this place makes me want to go back...like now.

Simply Sushi is a fairly new sushi restaurant in the Salt Lake area. It's an all-you-can-eat sushi restaurant that is affordable. Yes, I just said affordable and sushi in the same sentence.

I'm sure some of you are squirming at the idea of an all-you-can-eat sushi place. You're probably picturing a salad bar type table with ready made sushi sitting on ice? No, no, no.

We always sit right at the bar and watch them make what we order. Their sushi chefs make everything to order. They have a huge selection of nigiri, rolls, hand rolls plus miso soup. They also have a non-sushi menu for the kiddies.

Their all-you-can-eat is for one hour and does not include any non-sushi items.
Trust me, that's a long time to sit an eat as much sushi as you want.

  • AYCE Dinner is a very affordable $19.95
  • AYCE Lunch is an even more affordable $14.95
  • You can also order anything on the menu ala carte, you just pay the listed price.

When hubby and I go we usually order a couple hand rolls (I like their Wise Guy roll...spicy tuna, avocado, rice) plus a few of the long rolls, and a few pieces of nigiri. And we leave STUFFED.

Their chefs are very friendly and if you request anything special they're happy to oblige. Many times we've told them to surprise us with something.

Sushi art. A seared tuna flower. How neat is that?

So yeah, I don't know how many of my readers are in the Salt Lake area or if they have Simply Sushi restaurants in other areas. But I love it and strongly encourage you to see if there is one around you...or make a trip to Utah just to eat there.

Spring Cleaning? Pffft!

I hate housework. I don't know anyone that particularly loves it though, so I know I am not alone in this.

There are a few household chores I do not mind doing...like paying the bills, checking the mail, cooking dinner

Oh wait...that's not what this post is supposed to be about.

I'm a laundry hater. I'd rather scrub a toilet than do laundry. But since I always do the laundry, I always make hubby do the toilets. It's hardly a fair trade.

Keeping my house in 'presentable' mode is easy. It's the spring cleaning that I hate. The deep cleaning, the cleaning of things that nobody ever see's but if you don't clean it every once in a while then people will eventually notice it. Like baseboards, blinds, ceiling fans, vacuuming under and behind heavy furniture.

Here are a few cleaning tips I've learned...and a few that I'm teaching to my kids.

My Mom always told me to NEVER do the vacuuming before you sweep your floors and dust. As dirt and dust just winds up on the carpet after those chores therefore vacuuming prior to those two chores defeats the purpose.

When wiping your counter tops...do not just wipe things on to the floor. Even if you intend to sweep the floor afterward. Why? I don't know....my Mom said?

I've had to teach my daughter that 409 and a washcloth is NOT to be used when cleaning the bathroom mirror.

I've also had to teach her that liquid laundry detergent and liquid fabric softener ARE NOT the same thing. (she used softener as detergent)

And I find myself repeating to her the dusting before you vacuum rule and the not wiping things onto the floor rule.

So, back to spring cleaning.
The bulk of spring cleaning at my house consists of de-junking the kids closets and toy boxes and donating clothing, books and toys that are still in usable condition. Or if we've accumulated enough crap (yes crap) then we have a yard sale. I'm always amazed every year when we drop off those donation boxes that we even had room for all of that stuff in our home.
